Smoky Cheese Truffles

2 pkg. cream cheese, softened, 8 oz. each
1 cup shredded smoked cheddar cheese, room temperature
1 cup shredded smoked Gouda, room temperature
1 pkg. hickory smoked bacon, cooked and crumbles, 1 lb.
1/2 cup finely chopped green onion
1/2 t. seasoned salt
1 sleeve round buttery crackers, crushed, such as Ritz

In medium bowl, mix cream cheese, shredded cheeses, bacon, green onion and seasoned salt. Beat at medium speed with mixer until well mixed. Cover and refrigerate for 2 hours. Shape cheese mixture into 1 inch balls. Roll in cracker crumbs to coat. Refrigerate until ready to serve. Makes about 4 dozen.
