ENGLISH CHEESE CHOWDER
ENGLISH CHEESE CHOWDER
1 C. carrots--finely chopped
1 C. celery--finely chopped
1/4 C. onion--finely chopped
1-3/4 C. chicken broth
2 C. milk
1/4 C. flour
Dash of paprika
2 C. grated Old English sharp American cheese.
Salt to taste at the table.
Combine carrots, celery, and onion; add chicken broth. Heat
to boiling; reduce heat, cover and simmer for 15 minutes.
Combine milk, flour and seasonings; stir until smooth. Add
to broth; stir until thick and bubbly.
Reduce heat. Add cheese and stir until smooth and melted.
Serve with some really good, warm, crusty bread and a baked
fruit dessert.
Makes about 8 cups.
